Ingredients

Crust:

  • 2 cups gluten free or all-purpose flour
  • 1/2 cup monk fruit sugar
  • 1 cup vegan butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Dipping Sauce:

  • 2 cups strong coffee
  • 1/8 cup rum (optional)
  • 4 tbsp maple syrup or vegan honey

Filling:

  • 2 cups raw cashews soaked in water for 2 hours
  • 1/4 cup cocoa powder
  • 1/2 cup strong coffee
  • 6 large pitted Medjool dates
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract

Topping:

  • 4 cups whipped coconut cream (freezer section)
  • 1 cup shaved semisweet chocolate
  • 3/4 cup cocoa powder

Utensils:

  • 2 medium bowls
  • Whisk
  • Mixing Spoon
  • Piping bags
  • Measuring spoons and cups
  • Blender
  • 9×13 or 12×12 dish to assemble tiramisu

INstructions

  1. Preheat oven to 350 F
  2. Remove tofu from package and drain liquid. Place tofu on a plate and place heavy plate or object on top of tofu for 15 minutes to release excess liquid.
  3. In food processor, blitz graham crackers, walnuts and vegan butter until mixture becomes a fine crumble. Firmly pat mixture into a 9-inch springform pan and wrap the bottom well with 2 sheets of tinfoil, leaving the top exposed. Place pan with foil inside into a sheet pan and pour 1.5 cups of water in the sheet pan around the springform pan. This will help ensure the crust doesn’t crack when baking. Bake for 8-10 minutes.
  4. To blender, add drained tofu, dairy-free cream cheese, 8 figs, monk fruit sugar, vanilla, lemon juice and lemon zest. Blend very well until smooth.
  5. Once pie crust is cooled, pour mixture on top of crust (still in springform pan on sheet pan) and bake for one hour. Once done, turn off oven, open oven door and allow the cheesecake to cool inside the oven for 1 hour. This will present the cheesecake from cracking.
  6. Once cooled, refrigerate the cheesecake for 4 hours and decorate the cake with fresh figs.

Tip: Place the cheesecake in freezer one hour prior to serving to ensure the cheesecake slices smoothly. Enjoy!

Longevity Practices to Help You Live Well

What are the common threads among people who enjoy long, healthy lives? Here’s a small glimpse into some lifestyle factors shared by long-lived people.

They move their bodies.

Whether it’s walking gardening, swimming, dancing or something else, they get out and move every day.

They eat a healthy diet.

One universal thread between healthy diets is to limit sugar and processed food intake while increasing fruit and vegetable intake.

They don’t smoke.

Countless studies have linked smoking chemical-laden cigarettes to disease and premature aging.

They drink moderately.

With alcohol consumption, just a little is just right for increasing longevity.

They exercise their brains.

Crossword puzzles, sudoku, and reading are all hobbies of people living long, healthy lives.

They get regular checkups.

Staying on top of any health issues that may arise gives time to treat them proactively instead of reactively and keep them under control.

Fortunately, our culture views aging as something we can take some control over, rather than something we must succumb to. What does modern science tell us we should do to lead a long healthy life?

1. Modulate insulin and IGF-1

Excess insulin and IGF typically lead to weight gain and contribute to some age-related diseases. Lowering processed foods, carbohydrates, and sugar consumption is the fastest way to begin to get insulin and IGF-1 levels under control. Supplements like Alpha-Lipoic Acid, Cinnamon, Chromium, and Berberine have all been studied for their effectiveness to help lower blood sugar.

2. Regulate mTOR

The mammalian target of rapamycin is a cell signal that regulates cell growth, cell proliferation, and stalls autophagy (natural cellular cleansing). mTOR is also necessary for the activation of receptors for insulin and IGF. Dietary and drug interventions designed to reduce mTOR appear to increase a healthy life span. EGCG from green tea, caffeine, turmeric, and resveratrol have shown a positive effect on mTOR in studies.

3. Increase AMPK

AMP Kinase is an enzyme that counters the effects of mTOR. Raising AMPK has been shown to have positive effects on weight loss, heart health, and mental acuity. Herbs and supplements that increase AMPK have a whole host of benefits on the body. Exercise has been shown to be effective in increasing AMPK and while less popular, a cold dunk or shower will give you a similar benefit. Additionally, herbs that may increase AMPK include resveratrol, quercetin, green tea, berberine, curcumin and the Chinese herb Jiaogulan (Gynostemma).

4. Active Sirtuins

Low Vitamin D levels are associated with an increased risk of upper respiratory infection. Supplementing with Vitamin D has been shown to reduce respiratory infections and overall infection risk. Parents want to raise happy and healthy kids.  

We love our children with all of our hearts, and we want to give them the absolute best.  

But how exactly can we do that?

The old joke is true – there is no parenting manual.  

And while there are hundreds of thousands of parenting books, resources, and experts, in reality sorting through so much information can be overwhelming.  

As families prepare to head back to school, happiness and health are top of mind!

Many experts agree that we can increase wellbeing in our families by focusing on two areas: lifestyle practices and nutrition & supplements.  

Lifestyle Practices

Routine
A routine offers children an organized, and predictable environment, which can make them feel grounded, secure, and safe. As children grow and experience life’s constant changes, having a routine can offer an anchor to sense consistency and of belonging to a family. The key to a successful routine is consistency – choose a simple routine that you and your kid enjoy and stick to it!

Activity
