How to freeze roasted Hatch Peppers:
- Remove the blistered and charred skin where possible when cool enough to handle. Wearing gloves is recommended!
- Depending on the recipe(s) you will be making with your Hatch Peppers, you may want to consider de-seeding and de-stemming the peppers prior to storing.
- Allow freshly roasted peppers to completely cool before preparing for freezer.
- Place roasted peppers in freezer bags or plastic freezer containers with lids. Always choose storage bags or containers that are airtight to avoid crystallization.
- Pro-tip: Do not overpack your bags or containers! If storage packaging is oversized, hatch peppers will freeze slowly resulting in a mushy texture due to ice crystal formation within the pepper tissue.
- Place bags or containers in freezer, be sure to label it with the date.
- When ready to enjoy, allow frozen peppers to thaw before using.
The best way to enjoy Hatch Peppers year-round is to freeze and thaw when needed. They can be stored in the freezer for up to 1 year when properly stored!
